This recipe is perfect for kids to get involved with the measuring and mixing. Makes sticky, sweet, (and yes), moist cupcakes.
Equipment needed :
Stand mixer or hand mixer
2 1/2 cups Flour
1 1/2 cups Sugar
3 teaspoons Baking Powder
1 cup Milk
1/2 cup Vegetable Oil
1 teaspoon Vanilla Extract
1 cup water
My oven is a fan assisted oven, and is heated up to around 165 degC. For normal convection ovens I recommend a touch higher at 175 - 180 degC
Line a cupcake or muffin pan with cupcake liners, like these CUTE ones I found at Checkers
In your stand mixer bowl combine flour, sugar, salt & baking powder
In another combine milk, eggs, vanilla & oil
Add the wet ingredients to the dry ingredients and mix until well combined.
Slowly pour in the water and mix well. This mixture is quite runny
Spoon into cupcake liners and fill about 2/3 of the way. Bake for between 15 & 17 minutes until a toothpick comes out clean.
Ice with your favourite buttercream icing and smash in!
